Pumpkin Pie without the fat and carbs!

Just discovered this through a little experimentation.  Quite satisfying for the sweet tooth, great fiber, huge amounts of vitamin A

1/2 C Pumpkin
2 tsp Honey 
1/4 tsp ginger root, grate
Spring of Allspice and Cinnamon to taste
1 tsp lemon juice
 
Mix, chill, enjoy!  
 

Scary. . .

. . .  how good I feel.  It’s been two days and I keep expecting the headache I’ve been warned about, or the rumbley tummy or the craving of that which I’m not “suppose” to have.  Not happening!

Woke at my normal 5:00 am, made coffee for my husband and then made my morning juice and sipped on that while I made a mid-morning and early afternoon juice both of which went to work with me.  Yes got a few funny looks while I sipped the electric green and later fluorescent orange juice but not a comment was made. . . but to be fair I’m the consummate smart ass and they all know this sooooooo yah.  LOL  So far so good!  😉

 

Carrot Pineapple “salad”

This used to be my most favorite salad as a kid; however the original involved mayo. . . . *shudders.  As with all my recipes, make the assumption all ingredients are organic.

Here’s my juice version:

4 carrots  washed

1 C pineapple

1″ ginger

3 hands-full of spinach

Juice all in whatever order.  Pour over ice and enjoy!  Yummy!

First Full Day. . .

. . . on the mostly juice reboot.  I’m shocked!  I’m not hungry and wasn’t all day.  Drank all the juice suggested with a few modifications (one recipe to follow) and had an apple for a snack tonight.  I’m stuffed!  I “want” a piece of chocolate but not out of need; it’s a want a habit and I’m not distressed by not having it.  WOW!  Feel really good, really relaxed and am ready for bed.  I’m impressed!

 

Maybe I should be taking pics of my juice. . . .  LOL  we’ll see 😉

 

Ginger Carrot Pop

2″ piece of Ginger

2 Granny Smith Apples

1/2 bunch purple kale

8 Carrots, medium sized

Juice all of the above and enjoy!  Quite tasty with a zip of ginger and round fullness of the carrots without it tasting like it came out of a health food store!
